Hefeweizen-Battered Chicken

Two words: Beer Batter. The lemony goodness from UFO Hefeweizen mixed with the heat from the cayenne makes drumsticks, dare we say, finger lickin’ delish.

What You Need:

Buttermilk Soak:

–  3 cups buttermilk

–  2 tbsp. salt

–  1 tbsp. pepper

–  2 tsp. cayenne pepper

–  3 lb. chicken

Beer Batter:

–  2 cups flour

–  2 tsp. onion powder

– 2 tsp. garlic powder

– 2 tsp. cayenne pepper

– 2 tsp. salt

– 2 tsp. pepper

– About 1 ½ bottles UFO Hefeweizen

– Oil, for frying

What You Do:

  1. For the buttermilk soak: Combine buttermilk, salt, black pepper and cayenne in a large bowl. Add the chicken, turning to coat. Let sit at room temperature for two hours, or refrigerate for four hours.
  2. For the beer batter: Whisk the flour with the onion powder, garlic powder, cayenne pepper, salt and black pepper. Gradually whisk in the beer to make a thin batter.
  3. Once the chicken has soaked, drain it and thoroughly pat it dry with paper towels. Transfer the chicken to the batter, turning to coat.
  4. In a skillet, heat 1 in. of oil to approximately 350 degrees F. Fry the chicken in batches, turning once, until the outside is crispy and golden (about 20 minutes for thighs & breasts). Let cool 5 minutes before serving.
