UFO White Butterscotch Beer Pudding

Who says Halloween has to be all candy corn and caramel apples? Here at UFO we’re always trying to pack the most flavor into everything we do. Halloween is no different! That being said, we also like to change things up a bit - who says everything has to be all candy corn, caramel apples and spookiness? We think this Butterscotch Beer Pudding (think...Butterbeer…) made by our friend @caffeinated.kitchen is the perfect recipe for a Halloween party. And, what’s better? It’s made with UFO White. So grab a 6-pack and get cooking!

What You Need:

– 5 tbsp unsalted butter
– ¾ cup dark brown sugar
– ¼ cup cornstarch
– ¼ tsp cinnamon
– 1 ¼ cup heavy cream
– 1 cup UFO White
– 2 large egg yolks
– 1 tsp vanilla
– ½ tsp salt

 

– 1 cup heavy whipping cream
– ¼ cup powdered sugar
– ½ tsp cinnamon
– ½ tsp allspice
– ¼ tsp ground ginger
– ¼ tsp ground cloves
– ¼ tsp ground cardamom
– ½ tsp vanilla extract

What You Do:

1. Melt butter over medium heat, add brown sugar and stir to combine and keep stirring until dissolved.
2. It should look creamy and not lumpy. Keep stirring until it moves lazily around the saucepan like very thick caramel
3. Remove from heat and set aside
4. Whisk heavy cream, beer, egg yolks, cornstarch, cinnamon, and vanilla over medium heat until it begins to simmer
5. Add half the brown sugar and butter mixture, whisking until thoroughly combined
6. Add the second half and whisk until combined
7. Continue stirring with your whisk until it comes to a bubbling boil. If you don’t consistently stir during this portion it will burn!
8. If it still looks liquid around the edges when it begins to boil, keep stirring and leave on the heat until the entire mixture is the same consistency. It should easily coat the back of a spoon.
9. Transfer to preferred containers and chill for at least 2 hours
10. When ready to serve make the whipped cream:
11. For best results, chill your mixing bowl in the freezer for 20 – 30 minutes
12. Combine all the spices in a bowl
13. Add the whipping cream, powdered sugar, and combined spices into mixing bowl
14. Beat on high speed until soft peaks begin to form
15. Spoon onto the pudding and top with preferred toppings like walnuts or a sprinkle of cinnamon
