UFO Winter Chicken Salad Pairing

The holidays might have come and gone but we still have a lot of winter ahead of us. That means we’re on board for all the snow days where the only things we have in the fridge are UFO Winter Blonde, leftover chicken, and mayo. You might this would be a terrible combination but look no further than @caffeinated.kitchen’s amazing pairing for winter chicken salad and our UFO Winter Blonde. This chicken salad goes great next to a cold glass of our favorite winter seasonal.

What You Need:

– 1 rotisserie chicken, shredded
– 1 cup mayonnaise
– ½ cup sour cream
– ½ cup dried cranberries, chopped or left whole
– ¼ cup walnuts, chopped
– 2 sticks celery, diced
– 1 tbsp fresh lemon juice
– 1 – 2 tbsp fresh parsley, chopped
– Baby spinach, fresh bread, potato chips – for serving

What You Do:

1. Remove the skin from the chicken and shred
2. Finely dice the celery
3. Add the chicken to a bowl with the mayo, sour cream, cranberries, walnuts, diced celery, lemon juice and herbs
4. Mix until well combined
5. Spread evenly on the bread of your choice (I prefer a fresh, whole grain bread)
6. Top with baby spinach, cut and enjoy. Eat with chips!
